The favorite trout recipes of husband and wife biologists Deborah Perzow and Bill Nowell of the Kenauk wildlife reserve in Montebello, Quebec are described. These include Bill's Favorite Sauteed Rainbow Trout and Barbecued Speckled Trout with Mint.
