Salads can be nutritious because of the variety of ingredients that are available. Recipes for summer slaw and shrimp, chicken broccoli Caesar salad, orzo salad with spinach pesto and asparagus, beef barley salad with tomatoes and gazpacho lobster salad, and the nutritional value of the salads, are given.

Gourmet Mediterranean foods are known to be rich in calories; also, there is nothing that is more comforting than gorging on these home cooked meals. A scaled down version, minus the extra cheese and oil, of these recipes are presented, including mushroom risotto and an artichoke-and-olive pizza.
