Mushroom power: mushroom devotee Andrew Weil, M.D., celebrates mushrooms' immunity-boosting powers - and their culinary virtues
Article Abstract:
Some mushrooms must be included in the diet not only for their flavor but more so for their medicinal properties. However, Weil, an expert on both traditional and alternative medicine, cautions that mushrooms must not be eaten raw and must also be thoroughly washed before they are cooked to make the most of their nutritional benefits. Mushrooms that are fresh and springy are those that are usually safer to eat.
