Highly efficient gluten degradation by lactobacilli and fungal proteases during food processing: new perspectives for celiac disease
Article Abstract:
A new mixture of selected sourdough lactobacilli and fungal proteases is used to eliminate the toxicity of wheat flour during long-time fermentation. It is considered as an efficient approach to eliminate gluten toxicity.

Evidence of still ongoing convergence evolution of the lactase persistence [T.sub.-13910] alleles in humans

The background of the alleles carrying the critical variant in 1611 DNA samples from 37 populations were analyzed and concluded that the [T.sub.-13910] allele was independently introduced more than once.
