The weak acid preservative sorbic acid inhibits conidial germination and mycelial growth of aspergillus niger through intracellular acidification
Article Abstract:
Aspergillus niger is an organism which spoils food and fruit juices due to it's resistance to modern day preservation techniques. In this study the effects of sorbic acid on spore germination and mycelial growth in aspergillus niger is investigated.

Decarboxylation of sorbic acid by spoilage yeasts is associated with the PAD1 gene
Article Abstract:
The spoilage yeast Saccharomyces cerevisiae degrades the food preservative sorbic acid with the help of the gene identified as PAD1. This decarboxylation is assessed as a possible mechanism of resistance in spoilage yeasts.
