Improving the nutritional value of Golden Rice through increased pro-vitamin A contentPaine
Article Abstract:
'Golden Rice' is a variety of rice engineered to produce beta-carotene to help combat vitamin A deficiency and it is predicted that its contribution to alleviating vitamin A deficiency would be substantially improved through even higher beta-carotene content. A phytoene synthase (psy) from a maize that substantially increased carotenoid accumulation in a model plant system is identified.

Golden Rice gets a boost from maize: A more nutritious version of golden rice may offer a practical solution to vitamin A deficiency
Article Abstract:
Golden Rice genetically engineered to produce beta-carotene in its seeds was widely heralded in the popular media as a potential means of combating vitamin A deficiency. The development of a new generation of Golden Rice that uses an enzyme from maize to dramatically increase grain carotenoid levels over 20-fold is presented.

Folate fortification of rice by metabolic engineering
Article Abstract:
Folate biofortification of rice seeds is achieved by overexpressing two Arabidopsis thaliana genes of the pterin and para-aminobenzoate branches of the folate biosynthetic pathway from a single locus. A maximal enhancement is obtained, with polished raw grains containing up to four times the adult daily folate requirement.
