How safe is chicken?

Article Abstract:

Recent research has indicated that many chickens on sale at UK supermarkets are contaminated with bacteria which could cause food poisoning. It is impossible for the ordinary to consumer to tell whether a chicken is contaminated, but it is worth being aware that the risk of contamination is greater if the chicken is diseased or damaged. It was found that some chickens had severe bruising, some were contaminated, some diseased and some had not been bled properly.

Food shops should clean up their act

Article Abstract:

Some 80% of loose ham from delicatessens was found to be contaminated by bacteria, compared to 44% in similar ham from butchers, and one third in that from supermarkets. The survey encompassed 27 butchers, 27 delicatessens, and 86 supermarkets. There is increased risk of contamination in products from butchers and delicatessens due to poor hygiene practises by staff. A food hygiene checklist is included, together with brief details on the bacteria in question.

Food bugs rife in chicken

Article Abstract:

Issues are presented concerning the levels of campylobacter and salmonella which are found in processed chickens. The spread of contamination in slaughter houses and the need for better hygiene enforcement are discussed.
