Cooks can keep low-fat dishes flavorful by using stronger spices. They can use herbs, spices or grated citrus peel instead of butter in mashed potatoes. A recipe for curried chicken is presented. The chicken is fried in nonstick cooking spray and flavored with garlic, ginger and yogurt.
