Calls for making wine less snobbish and more accessible are leading to a denigration of the practice of thoughtful, carefully considered wine appreciation created by wine lovers over several decades. Those who take wine seriously, who care about fine wine being served well and lovingly, are increasingly seen as the enemies of wine populism.

The myth of the all-purpose palate

An attempt is made along with examples, which suggest that there does not exist any such thing as an all-purpose palate. The goods and bads of different types of palate like the retailer palate, wine critic palate, winemaker palate, sommelier palate and consumer palate are provided.
