As consumers become more and more aware of the importance of calcium in their diet due to an increased risk of osteoporosis there has been a surge in the intake of dairy products. Data from around the world has revealed that on a yoghurt sales rose by 42% between 1992-96. Datamonitor, the research company has reported that the yoghurt area of the dairy industry revealed the largest growth in the UK market; butter on the other hand reported a 6.3% growth while cheese grew by 9.2%. As demand for calcium rich dairy products intensifies manufacturers are continually making new developments. Lactoval, for example, is a 100% natural milk calcium which is used in capsules, tablets and powder formulations. Vegetarians are also being catered for with rennet free cheeses being made.

Article Abstract:
The dairy industry is supporting Option IA of the fluid milk pricing plan being proposed by Secretary of Agriculture Dan Glickman. The U.S. Department of Agriculture's plan hopes to set uniform regulatory standards for dairy processors and overhaul the milk pricing system. The plan is offered in two options: the Option 1A, under which retail milk prices would not experience much changes; and the 1B, the option approved by Glickman which would dramatically cut regional disparities in fluid milk prices in the next five years.
