Dining in America: the future

A typical US restaurant in the 21st century is expected to be a spacious site where a broad assortment of menus is served in smorgasboard style. Cookery will become more adventurous as food from far-away cultures will be introduced. Asian cuisine will become a staple in US dining.

Nuevo Latino cookery in American restaurants is discussed. Particular attention is given to the mixing of international ingredients in creating ingenuous dishes in the New York restaurants Patria, Aramara and Pasion!. The wine lists at the three restaurants are examined.
