Information about the use of wine grapes to create versatile cooking ingredients like verjus, vin cotto and grape seed oil is presented. Tips to use verjus, which is the juice of green grapes, vin cotto or saba which is cooked grape juice and grape seed oil which is light and has a high smoke point and neutral flavor, in salads and different dishes are provided along with their various advantages.
