Olives of Andalusia

Olives play a large part in Spanish cooking. Some of the finest olives are grown on the southern part of the Iberian Peninsula. Recipes include potato omelet with olives, shrimp, orange and olive salad with sherry vinaigrette, and lemon-garlic olives.
