Chicken salad memories

Old-fashioned chicken salad in the 1940s was made from old roosters and chickens whose often tough but flavorful meat gave the dish a distinctive taste. This is in contrast to modern chicken dishes, which call for young and tender birds that fail to evoke the rich flavor of older specimens.
