Teaching ethics to community nutrition students: a case study approach

Article Abstract:

Community nutritionists must follow standards of ethical behavior in the pursuit of their profession. Consequently, community nutrition students should be taught how to act appropriately in a wide range of situations through case studies. A teaching module, using case studies, was developed to help community nutrition students increase their understanding and skills in handling different situations. A discussionof the key features of the module is presented.

CyberNutrition On-Line: educating nutrition students and the public in cyberspace

Article Abstract:

The CyberNutrition On-Line project is a program designed to train college nutrition students on the handling of queries from consumers using online technology. It utilizes Internet features such as electronic mail and the World Wide Web. Since its establishment in 1995, CyberNutrition's web site has received thousands of nutrition-related questions from Internet surfers. It has helped advance nutrition professionals as reliable sources of information.

The effectiveness of nutrition education and implications for nutrition education policy, programs, and research: a review of research

Article Abstract:

The results for 217 nutrition education studies on children and adults are discussed. Studies on preschool children focused on the effects of nutrition education on knowledge and behavior, while those on school-aged children dealt with general food and nutrition issues and behavioral change. Studies on adults included national media campaigns, the Expanded Food and Nutrition Education Program and the effects of nutrition education.
