The potential of cowpea as human food in Nigeria
Article Abstract:
Canned beans and cowpea flour can be used for human consumption in Nigeria. Legumes are valuable sources of proteins, thiamine and niacin and dietary fiber. Cowpea, widely produced in the country, is also the widely consumed legume because of its taste and ease of preparation. Prolonged cooking time, methionine deficiency and gastrointestinal disorders associated with legumes contribute to the underutilization of legumes in the land. Nigerians prefer the canned beans such as the imported Heinz Baked Beans. The government should develop irrigation programs and put up more canning facilities to hasten production and processing of cowpeas for human use.
