A recipe is provided for a delicious Middle Eastern appetizer popular in Turkey. It is a pureed eggplant dish called Babaganooj. It features the taste of flame-roasted eggplants, garlic and sesame paste. Tips are also given on the handling of eggplant before cooking, and other eggplant dishes.

Flame roasting sweet bell peppers, whether green, yellow or red, brings out a smokey taste that can be enhanced with a simple oil-vinegar sauce. A recipe for pesto peppers uses this roasting technique. Other pepper recipes include stuffed peppers, and roasted eggplant with hot peppers.
