Uncommon spring vegetables and weeds, such as sweet violets, fiddlehead ferns, garlicky ramps, spinach, chervil, beet greens, dandelions and baby lettuces, may be novel ingredients for salads. However, these have been used in cuisine since ancient times and are popular throughout Europe.
