Biscuits, savory bits of baked dough were the pride of Midwestern Sunday dinners, Southern wedding parties and ladies' teas and they appear in various forms in the 18th and 19th century American cookbooks, the spiral bound regional collections of the 20th century and in handwritten notes on paper. An American cookie is an Englishman's biscuit and the North American bakers produced the simplest form of dried bread called sea biscuits.
