Le Bilboquet is a French bistro on the Upper East Side whose proprietor, Philippe Delgrange, courts only those customers he feels belong. Diners unappreciative of waiters who dance on the bar when they are not bringing tables the wrong order are encouraged to seek service elsewhere.
