Peking duckling with a Lincolnshire accent
Article Abstract:
Cherry Valley in Lincolnshire produces 6.5 million ducklings a year for eating and another two million for breeding in over 80 countries, and is the world's largest duck producer. To qualify as duckling, they must be slaughtered at 49 days old before their second stage feathers are formed. Different strains produce different weights at the 49 day stage, ranging from 3.5 to 7.5 pounds. Nothing is wasted, the feet and heads going to Chinese restaurants and the feathers to duvet and pillow producers. Roast duck contains 30% fat compared with chicken's 14% and work is being done to produce a leaner bird.

An ugly duckling spreads his wings
Article Abstract:
Austrian Jewish composer Alexander von Zemlinsky faded into relative obscurity after his death in exile in New York, NY, in 1942. However, there has been a gradual revival in interest in his work since the early 1980s, and he is now seen as being closely linked with the culture of Vienna, Austria, in the early 1900s. It is now recognized that he was very successful in linking the motivic development of Brahms with the emotional power of Wagner, as seen in his opera 'Es war einmal.'
