Article Abstract:

Canada's top five contract foodservice management chains of 1999 continue to enjoy increased sales as more companies outsource their foodservice operations to concentrate on core businesses. These five chains, namely ARAMARK Canada Ltd, Cara Operations Ltd, Sodexho Marriott Services Canada Ltd, Compass Group Canada and Laliberte and Associes, extend their services to airlines, businesses, campuses, hospitals, remote sites as well as the retail sector. With the continued expansion, these chains face the challenge of managing their own growth.

The future is now

Article Abstract:

The major issues which will afect the foodservice industry in the near future are food safety standards, the challenge of restaurateurs to sufficiently staff their establishments and ways to capitalize on demographic changes in the market. As to food safety, the most important concern is the controversy surrounding genetically modified foods. Restaurateurs are currently facing an acute shortage of labor. They are also studying how demographic changes will affect their market.
