Detection of active yeast cells (Saccharomyces cerevisiae) in frozen dough sections

Article Abstract:

A new method for counting active yeast cells in frozen dough sections was described. Double staining with 4',6-diamidino-2-phenylindole and Evans blue and fluorescence detection allowed differentiation between dead and living yeast cells. The counting of active yeast cells after fermentation correlated well with the gas-producing capability of the dough. However, correlation between this method and the conventional method of plating of the yeast cells was poor.

Intrinsic properties of so-called dormant probiotic bacteria, determined by flow cytometric viability assays

Article Abstract:

Plate counting and four culture-independent flow cytometric assays were used for determining the viability and intrinsic properties of three so-called probiotic strains while storage. The strains demonstrated reduction in plate counts but could maintain esterase activity, intact cytoplasmic membrane and pH gradient.

Adhesion of bifidobacteria to granular starch and its implications in probiotic technologies

Article Abstract:

Many bifidobacteria can adhere to starch granules, which could be used to microencapsulate the bacteria for use as probiotics. The adhesion appears to involve alpha-1,4-linked glucose sugars and is reduced by protease, pancreatin, and pH values of 3 or less.
