Effects of high pressure on survival and metabolic activity of Lactobacillus plantarum TMW1.460

Article Abstract:

Results indicate that application of high pressure on the beer spoiling bacteria Lactobacillus plantarum TMW1.460, causes sublethal injury to 99.99% of cells at exponential inactivation phase. Data show that injured cells are metabolically active and partially viable with damaged membranes.

Exopolysaccharide and kestose production by Lactobacillus sanfranciscensis LTH2590

Article Abstract:

Research demonstraes that the sucrose metabolism of Lactobacillus sanfranciscensis is affected by sucrose concentration in the medium as revealed by an increase in the exopolysaccharde production and decreased sucrose hydrolysis activity. In addition, the bacterium forms a metabolite, which is identified as 1-kestose, a fructo-oligosaccharide.

Characterization of a highly hop-resistant Lactobacillus brevis strain lacking hop transport

Article Abstract:

The mechanisms of hop resistance Lactobacillus brevis were analyzed at the metabolism, membrane physiology and cell wall composition levels. The beer spoiling L. brevis was adapted to high concentration of hop compounds and upon adaptation to hops the metabolism changed to minimize ethanol stress and resulted in higher levels of lipoteichoic acids (LTA) incorporated into the cell wall and altered the composition and fluidity of the cytoplasmic membrane.
