Changes in glycolytic activity of Lactococcus lactis induced by low temperature

Article Abstract:

Results show that Lactococcus lactis exhibits increased glycolytic activity following a shift from 30 to 10 C. Data indicate that both sugar phosphotransferase system subunit HPr and catabolite control protein A increase in response to low-temperature.

Physiological and regulatory effects of controlled overproduction of five cold shock proteins of lactococcus lactis MG1363

Article Abstract:

Results demonstrate that cold shock treatment initiates a cascade of events mediated by the cold shock proteins in Lactococcus lactis. Data point out that these proteins may confer protection during freezing.

Cold shock proteins and low-temperature response of Streptococcus thermophilus CNRZ302

Article Abstract:

Streptococcus thermophilus CNRZ302 is discussed relative to its cold shock proteins and low-temperature response. Evidence for an active adaptation response of the thermophilic starter LAB S. thermophilus to a freezing challenge after exposure to low temperature has been found.
