Salt, alone or in combination with sucrose, can improve the survival of Escherichia coli O157 (SERL 2) in model acidic sauces

Article Abstract:

The time to achieve a [3-log.sub.10] reduction of an acid-resistant, acid-adapted, Shiga toxin-producing Escherichia coli O157 isolate was determined experimentally for 81 formulations at various pHs and acetic acid, NaCI, and sucrose concentrations in a broth model. The combinations were intended to simulate to aqueous phase of acidic sauces and dressings.

Induction of a global stress response during the first step of Escherichia coli plate growth

Article Abstract:

A study was conducted to understand the first events that occur when cells grown exponentially in liquid medium are transferred to a solid medium. The results indicate that in order to grow on plates, bacteria must not only adapt to new conditions but also perceive a real stress.

Physicochemical parameters for growth of the sea ice bacteria Glaciecola punicea ACAM 611(super T) and Gelidibacter sp. strain IC158

Article Abstract:

The growth of the Antarctic sea ice bacterium Glaciecola punicea increased when the bacterium was grown at suboptimal temperatures. However, this was not true for another sea ice bacterium, Gelidibacter sp. strain IC158.
