Use of molecular typing methods to trace the dissemination of Listeria monocytogenes in a shrimp processing plant

Article Abstract:

Random amplified polymorphic DNA (RAPD) analysis and pulsed-field gel electrophoresis (PFGE) effectively identify different strains of Listeria monocytogenes present in shrimps, during processing. The methods give L. monocytogenes isolates with reproducible DNA polymorphism. A combination of RAPD and PFGE give better results and remove the overlap of serogroups seen in RAPD profiles. Only two of the nine L. monocytogenes groups identified in the shrimps during processing are present in the final product. None of the environmental strains are present in the product.

Molecular and biochemical analysis of two beta-galactosidases from Bifidobacterium infantis HL96

Research has been conducted on the beta-galactosidases from Bifidobacterium infantis HL96. The molecular properties, enzymatic characteristic and the structure of the galacto-oligosaccharide synthesized via beta-galactosidases have been investigated.

Research has been conducted on the hepatitis A virus (HAV). The transfer of HAV from the contaminated fingerpads of a food handler to fresh lettuce pieces has been investigated.
