China's cooks please more and more palates: traditional flavors blend at regional borders, luring diners

Article Abstract:

China's growing economic prosperity has encouraged a number of dining establishment to experiment with regional Chinese cuisine to blend more Western ingredients into the dishes and bring out its continental appeal. Cantonese cooking, with its emphasis on natural flavors and fresh ingredients, has its appeal to adventurous palates since Cantonese cooking uses a wide variety of meat base in its cooking, including such exotics as snakes and cats. Sichuan cooking, on the other hand, is known for its spicy flavor and thick consistency.

YIC's Chan promises a feast; regaining control, founder plans expansion

Article Abstract:

Glenn Wai Cheung Chan, the founder of Yoahan International Caterers Ltd. (YIC), has regained control of the company and promises to increase the company's profits. Mr. Chan was able to convince YIC to sell him back a controlling stock of the company after leaving it in 1989. The caterer is planning several projects which include expanding and modernizing 26 outlets, expanding production sites and expanding the company's line of bakery products.

Thailand's hot zone: Isaan cuisine is spicing up Bangkok's streets

Article Abstract:

Isaan meals have gained increasing popularity in Bangkok, despite the haughty attitude adopted toward them by sophisticates. The cuisine comes from the impoverished part of Thailand where people have to stretch their meals by adding strong flavors, salted fish, lime juice and herbs such as spearmint. The enormously popular dishes have, thus, found their way from the streets to various restaurants that specialize in the region's cuisine.
