Fromages de Suisse have introduced Rosettes de Tete de Moine, a version of Swiss cheese which is scraped off by using a special instrument called a 'girolle.' This ready-to-eat product is offered at a price of about FFr 28 for a 100-gram transparent tray.

FRANCE: AOC FOR TATE DE MOINE CHEESE

Swiss cheese named 'Tete de Moine' (monk's head) is the first Swiss cheese to receive an AOC (Appellation d'Origine Controlee). This hard cheese is made from raw goat's milk and is sold in trays of 125 grams in self-service departments, or in wheels and half-wheels at delicatessen counters.
