Transaction costs and slaughter cattle procurement: processors' selection of supply channels

Article Abstract:

Meat processors in the United Kingdom have several supply channels to choose from for slaughter cattle procurement. Each channel has transaction costs that affect processor choice. These costs include information cost about the products, prices, inputs, buyer and seller; negotiation costs, such as opportunity cost; and monitoring costs, which include monitoring cattle handling from the farm to the abattoir. For most processors, the most important factor that affects channel choice is traceability of the origin, making monitoring cost the most important transaction cost for processors.

The role of food traceability systems in resolving information asymmetry is explored. Three functions of traceability systems are identified that includes ex post reactive systems that allow the trace back of affected products in the event of a contamination problem so as to minimize social costs, ex post systems that facilitate the allocation of liability, and information systems that provide ex ante quality verification.
