A springtime odyssey

Chef Costas Spiliadis of Manhattan's Estiatorio Milos offers a menu and recipes for a mulitple-course Greek meal for 8. The menu includes a Greek cheese plate, spreads and grilled bread, smoked eel salad, lobster salad, fish soup, whole fish with beet salad, stuffed rack of lamb, and fresh fruit with baklava and yogurt. Wine suggestions are included.
