Hints and techniques for the use of kitchen knives are presented, with advice given by Norman Weinstein of the New York Cooking School. The quality and type of knives are the most important aspects, although choosing the correct size of knife will also impact performance.

The hazelnut or filbert has a distinctive taste which goes well with fruits and in savoury dishes and particularly with chocolate. Hazelnuts from Oregon make the United States the third largest producer in the world, but the flavours are all different.
