Emeril cooks with wine in mind: Five easy recipes show wine at its best

Emeril Legasse, a chef, shares his ideas about food and wine matching with a special menu in which he makes a series of dishes to go with five of his favorite wines. A detailed description regarding how to prepare the dishes such as seared halibut with sweet corn, tomato and cucumber relish as well as seared salmon with vegetable lentils are presented.

Oregon: while waiting for the solid '98s, be choosy when buying the '96s and '97's

Article Abstract:

Oregon wines benefit from seasons with less rain than normal. The 1998 vintage may be one such year, perhaps rivalling the famous 1994 vintage. wherein the flavors are lavish. However, 1998 yields were low and some wines may be unusual. An analysis of the burgeoning wine industry in Oregon is presented.
