How does Priorat age?

Article Abstract:

Priorat, a mountainous region rising above the Mediterranean coast southeast of Barcelona, produces some of the best red wines in Spain. An important criterion for excellence in red wine is the ability to improve with age and Priorats appear to show their best from three to ten years after the vintage date, when their tannins have softened and their flavors have harmonized, but the vibrant, juicy berry, mineral and mountain herb character is still fresh and focused.

Jean Leon's challenge

Article Abstract:

Leon's experiment with foreign varieties forced Spain to look beyond its local traditions; his emphasis on the vineyard encouraged them to explore their indigenous resources. Jean Leon and Miguel Torres, Rene Barbier and Juan Mari Arzak, Alvaro Palacios and Ferran Adria have all in their turn and in their ways, challenged a mainstream Spanish culture that has rarely welcomed innovation, when it comes to food and wine.

Industrial ones have overwhelmed traditional products, and women no longer have the time or inclination to cook traditional meals. The food is not just satisfying hunger, bread and ham is enough for that, Spain is reaching for something more and the rest of the world is paying attention.
