Four Bordeaux Chateaus fined for use of wood chips

Article Abstract:

The addition of wood chips to wine to improve flavor has cost 4 French wine producers $13,000 each in fines imposed by the court of appeals in France. The practice has been used in other regions of France in the past but has not caused the same controversy as in Bordeaux.

The author of 'Steven Jenkins' Cheese Primer' loves locally-made Spanish cheese and is excited that they will be available in the US, but he hopes that quality will not suffer. Several of these distinctive cheeses are described.
