Article Abstract:

Two contradictory viewpoints, one a desire for greater ripeness in grapes, and the other a need for balance and finesse in wines are juxtaposed. It is emphasized that the former desire is replaced by the need for lower levels of alcohol and sugar content in wines, which is taken of by the use of modern machines or early picking of grapes.
