Red pepper mousse goes well with a 1990 Paul Jolivet Sancerre, and baked halibut with couscous and green bean salad can be accompanied by a 1991 Matanzas Creek Sauvignon Blanc. Fresh figs with apricot-cinnamon yogurt should be served with a 1988 Chateau Rieussec.
