Beyond cranberry sauce

Four relish dishes and one applesauce recipe are presented. They are: cranberry and pickled beet relish; pickled carrot, fennel, and red pepper relish; spicy butternut squash and orange relish; pink applesauce with horseradish; and spice pear and shallot relish.

Whole grains are excellent sources of fiber and nutrients, but many cooks fail to take advantage of their flavors in meals other than breakfast. Recipes are provided for such dishes as feta wheat berry salad and chicken with whole oat stuffing.

The emperor's soy sauce is considered as the best-tasting soy sauce type. The special sauce traces its origins to Noda, Japan, where it was prepared particularly for the shogun and the imperial family.
