Inhibition of LDL oxidation by phenolic substances in red wine: a clue to the French paradox?

Article Abstract:

Death due to coronary heart disease (CHD) is less among the French because of their regular intake of red wine which contains high-density lipoproteins (HDL). This inference explained the paradox of the low mortality rate in the French despite the consumption of saturated fat. The polysaturated lipid components of low density lipoproteins (LDL) when oxidized leads to artherosclerosis, implying that the inhibition of oxidation by antioxidants such as HDL reduces the risk of heart diseases.
