Shanks and short ribs: tender to the bone

Shanks and short ribs are very tough muscular parts of the animals. But slow even cooking renders these parts very tender. Eaten the next day, the dishes are even better. The 10 recipes offered include, spicy beef shanks with Julienne carrots, and lamb shanks with zucchini and avgolemono.
