The author points out that eggs are near perfect as they contain the nine essential amino acids and provides the necessary nourishment and protein there are six recipes using eggs including a tarragon shallot egg salad sandwich, poached eggs with roasted tomatoes and a rhubarb sabayon with strawberries.
