The secret ingredient: anchovies turn up in more restaurant dishes than you think

Anchovies impart a unique flavor to dishes, and many chefs use anchovies as a spice. Fresh or canned salted whole anchovies are the best. Several recipes are presented including curry-anchovy marinated lamb and Tuscan bean soup with anchovy-onion garnish.
