Truffles, which grow to foodservice quality only in the Mediterranean region and are difficult to harvest, remain the most expensive delicacy in the world. Recipes given include Truffles in Puff Pastry 'Cinderella' and Creme Brulee with Truffles.

Cabbage is not a popular vegetable, yet several varieties are flavorful and all varieties are nutritional. Recipes for cabbage pesto, penne with cabbage and potatoes and fiesolana, which all use cabbage as a main ingredient, are presented.
