Turkey is the traditional bird of choice for Thanksgiving, Christmas or Hanukkah, but smaller families may enjoy Cornish hens, quail or chicken. Recipes given include Southwestern Chicken with Roasted Pepper-Corn Relish and Baked Quail with Mushrooms and Wild Rice.
