Food intake, serum lipids and amino acids of school children in agricultural communities in Japan

Article Abstract:

An analysis of the link between serum lipids, serum amino acids and food intake in school children in agricultural communities in Japan indicates that there is a negative correlation between serum cholesterol and serum methionine and threonine. Saturated fatty acids are positively correlated with leucine and valine, while polyunsatured fatty acid/saturated fatty acid ratios are negatively correlated with isoleucine, leucine and valine, branched-chain amino acids. There has been a rise in serum cholesterol levels among children in Japanese agricultural communities during the 1990s.
