Nitrate and nitrite content in daily hospital diets during the winter season - comparison of analytical and calculation methods

Article Abstract:

The mean intake of nitrates and nitrites from general hospital winter diets has been measured through the use of two methods. The analytical method measures nitrate intake from all components from a portion of a patient's meal. The calculation method which measures nitrate intake using a database of food contaminants with mean nitrate levels for foods during the winter season from 1990 to 1997. Results show there is a positive correlation between the two methods. Nitrite mean intake has an r value of 0.55 while nitrate has an r value of 0.72.

Diets high and low in glycemic index versus high monounsaturated fat diets: effects on glucose and lipid metabolism in NIDDM

Article Abstract:

There is no evidence that a diet high in monounsaturated fat and glycemic index carbohydrates is conducive to weight gain in the short term in NIDDM subjects, according to research comparing high-carbohydrate with varying glycemic index and high-monounsaturated fat high-glycemic index diets under free-living conditions. The low-glycemic index and high-monounsaturated fat high-glycemic index diets both seem to be only slightly better dietary choices than a high-glycemic index diet.
