Saving graces: down-home, hearty recipes that helped a chef lose weight

The recipes that chef and cookbook author Jim Fobel used to lose more than 100 pounds in two years are presented. The recipes include a 'cream' cake made with powdered egg whites, chicken taco sandwiches, and beef-mushroom noodle casserole.

Papayas taste best when they are bright yellow and fairly firm. The fruit has a rich taste, and the seeds are edible. Recipes for a breakfast shake, turkey-papaya kabobs, tropical shrimp, papaya marinade, and papaya salsa are presented.
