The UK market for all fats recovered slightly in 1995 from 1994, rising to a value of 764 million pounds sterling. Volume sales fell steadily throughout the period 1991 to 1995. Concerns about healthy eating have had a particular impact on the yellow fats sector, where there is rising demand for low-fat and low-salt products. Demand for dairy spreads has increased as more consumers have opted for fats which have a pleasant taste. The yellow fats subsectors are predicted to see modest growth in the period to 2000, with particular demand for dairy spreads.
