Effects of combined shear and thermal forces on destruction of Microbacterium lacticum

Article Abstract:

Combined shear and thermal forces and their destructive effects on Microbacterium lacticum are discussed. Extrusion was used in the study in a concentrated gelatin inoculated with a heat-resistant isolate of the vegetative bacterial species. Higher shear forces with low water contents and calculated die wall shear stress were strongly correlated with bacterial destruction. Heat did not play a major role in cell destruction. A combination approach, it was thought, might be useful to kill microorganisms. Physical forces might be useful, it was thought, in differentiating between and maybe fractionating organisms.
