Some industry observers have suggested the combination of soup and juice bars may work better in the UK, as juice and soup tends to be seen as seasonal products. The owners of juice bars have to choose their location carefully because their products are aimed at the daytime market. Coffee shops have proved popular in the UK, with several companies planning to open more outlets. Starbucks has opened coffee shops within bookshops owned by Waterstone's. Some property agents have pointed out operators may find it more profitable to open coffee shops in the north.

Issues concerning ways in which the economic slow-down od 2001 is affecting the levels of economic performance of restaurants and bars are discussed. Particular attention is given to ways in which restaurants and bars can counteract the spending decrease.
